With the holidays coming up, I always get excited, but I also get stressed out. I love everything that comes along with the holidays, but sometimes I need some me time, and for me, that means baking up some delicious cookies. Not just any cookies, but these super simple and oh so yummy Chai Chocolate Oatmeal Cookies made with a special ingredient, Oregon Chai® Tea. It makes the flavor of these cookies over the top for the holiday season with the sweet and spice of the chai tea. There’s just something about making these cookies when the hectic days of winter get to be too much, that just helps melt the stress away with every gooey bite. I can’t wait to show you how to make them, but again the Oregon Chai Tea is key, and it’s not the easiest product to find. I found it in my local Meijer in the coffee and tea aisle, and you may look it over once or twice. I found it near the top shelf and the attractive design and colors on the packaging made it a little easier to find as well. I bought the Original flavor, but they also have a Sugar-Free and a Slightly Sweet Flavor, so there’s one for everybody’s liking. Also, a cool thing about the Original and Slightly Sweet flavor is that both are non-GMO and organic! Not only do I love this tea in my cookies, but I also prepare a hot chai tea to drink along with my cookies. I was looking for a tea experience that was better for me, that was still full of flavor, and this is it! Ingredients:
- 5 1/3 Cups Oatmeal
- 2 Cups Flour
- 1 Cup Mini Semi-Sweet Morsels
- 1 tsp. Salt
- 1 tsp. Baking soda
- 1 1/2 Cups Sugar
- 1 1/2 Cups Softened butter
- 1/4 Cup Oregon Chai The Original Chai Tea Latte Concentrate
- 1/4 cup Milk
- 2 Eggs
Step One- In a large bowl stir together your oatmeal, flour, salt, baking powder, and chocolate chips until its all well combined. The original recipe calls for unsweetened cocoa powder but we wanted to put a twist on it by adding chocolate chips instead. I think they turned out heavenly.
Step Two- Now, in a separate very large bowl, cream together your butter and sugar with a hand or stand mixer for 3-4 minutes until well combined. In the original recipe, it calls for three cups of sugar and 2 cups of butter but our cookies turned out flat. We realized we were using too much sugar and butter, so we adjusted the recipe to the perfect amount! Once your butter and sugar are creamed add your eggs, milk, and chai tea and beat until it’s all combined.
Step Three- Now slowly add your bowl of dry ingredients into your wet ingredients and stir together with a spatula until everything is well combined. This can get messy so make sure you have a large enough bowl so you can get everything mixed properly.
Step Four- Preheat your oven to 350 degrees and roll the cookies into small balls onto a baking sheet lined with parchment paper. Bake for 10-14 minutes or until the edges are golden brown and the middle of the cookies aren’t raw. Allow them to cook for a few minutes before enjoying with a tall glass of milk or a hot Oregon Chai Tea!
