What is a red velvet cake? It’s a vanilla cake that has some cocoa powder and red food coloring added to it. With the addition of buttermilk and vinegar to give it some acid, it has a bit of tanginess that is balanced out with the traditional cream cheese icing.
What you might not know is that originally red food coloring was not used in red velvet cake. It is believed that red velvet dates back to the Victorian era when cake flour wasn’t yet available. Instead, vinegar was added to cake batter to help make cakes soft and fluffy. If you add vinegar to a non-Dutch processed cocoa powder, it would make the cake a reddish-brown color.
